I personally find that the Socratic method can really change people who are open to reflection. There's no way an intellectually honest person can continue to dogmatically stick to a position once he realizes that he doesn't actually have any clear idea of what he believes. I am part of a religious outreach organization (I engage with secular, Jewish college students once a week in an informal sort of setting), so I do get a clear picture of which methods yield fruit and which don't. The beauty of the Socratic method, especially when conducted over the long-term, is that the person very often doesn't believe that they've even been persuaded - they just change their beliefs "on their own".
